How Hard Are These Mini Muffins to Make?
These muffins are easy peasy! All you need is pancake mix, the ingredients to make that, and your toppings.
After making these delicious pancake muffins, they have become a staple in our household.
The best part about it is literally anyone can make them. I started making these with my son when he wasn’t even two yet.
Your kiddos will be able to do almost every step with you. From whisking the pancake mix to adding in the mix-ins! My toddler had a blast doing it all…although he ate the pancake mix-ins more than he added them to each muffin 😂
Mom Tip: You can meal prep the pancake muffins for the week, and they are a great “on-the-go” snack.
I prepped a little while my toddler took his nap so that when it was time for him to help, it wasn’t a huge mess.
Things I prepped ahead of time include:
- Getting the mix-ins into bowls
- Measured out water
- Added mix to a bowl
- Got out all of the ingredients and materials needed.

- Baking spray
- Large mixing bowl
- Small bowls for your mix-ins
Ingredients:
- Pancake mix of your choice
- Ingredients to make the pancake mix
- Mix-ins of your choice
Muffin Mix-In Ideas
- Bacon
- Blueberries
- Chocolate chips
- Cinnamon and sugar
- Sausage and cheese
- Sprinkles
- Strawberries
Have fun experimenting with different mix-ins!
Instructions:
- Preheat oven to 350 degrees
- Spray down the muffin tin with cooking spray
- Whisk the pancake mix ingredients together
- Add pancake mix to the muffin tin. I fill mine up about 3/4th of the way
- Add your mix-ins to each muffin
- Bake for 12-15 minutes (stick with a toothpick to check)
- Enjoy!
Mom Tip: Do NOT use paper muffin liners. Your muffins will stick to the paper and it will be a wash. Instead, spray down the muffin tin with your spray of choice or use nonstick silicone muffin liners.

Does it matter what pancake mix I use?
Nope! Not at all. I personally use Krusteaz pancake mix because all you need to do is add water. Besides, they taste just as good as other brands with more steps. You can get it at most major grocery stores, and also off of Amazon.
How do I store the pancakes?
They store beautifully in an airtight container or freezer bag, ensuring you have a go-to snack or breakfast ready in no time. You can refrigerate your pancake muffins in a container or baggie for around 4 days. Just simply reheat in the microwave or toaster oven, or even eat them cold, depending on preference.
Can I make these ahead of time or freeze them?
You can definitely freeze them for later. After they bake, let them cool. Once fully cooled (around 20 minutes), put them in the freezer for two hours uncovered.
Once they are fully frozen, throw them in a Ziploc baggie!
What if I don’t have any muffin liners on hand?
If you want to spice up your pancake muffins even more, you can also use baking molds. It’s such a fun way to jazz up the muffins, and your toddler will think it’s so cool. I’ll add my two favorite ones below!
